This is my original hot pot recipe on how to make lau bap dui bo sa ot. It is somewhat of a cross between vietnamese pho and bun bo hue. This Vietnamese oxtail hotpot recipe is not that hard to make. You can enjoy this within 3 hours of cooking and prep time.

Hotpot is very unique since you can add whatever you want in your pot to enjoy. The main thing is the broth. The broth base is the holy grail to a good hotpot. This is one of the best hot pot recipe you will make! This is best enjoyed with meat. Seafood is optional. Goes well with yellow egg noodles or rice noodles are good too.

The fermented tofu or bean curd dipping sauce for this hotpot compliments extremely well. It is like adding the 1 to the 9 to make a perfect 10/10!

Adding corn to this broth bodes well to the subtle sweetness of the hotpot. A nice twist to the normal vietnamese hotpot.

Hot Pot Broth Ingredients:
– 5 lbs beef ribs

– 3 lbs ox tail

– 6 corn (cut in thirds)

– 2 yellow onions

– 3-4 large shallots

– 1 ginger root

– 1 oz dried aniseed (star anis)

– 4-5 oz rock sugar

– 1 clove garlic
– 8oz thinly sliced lemongrass

– red thai chili to taste

– 1tsp annato seed
– vegetable oil

– 2 cans vegetable broth

– 1 can chicken broth
– 1/2 jar of vietnamese shrimp paste (mam ruoc)

– salt to taste

– granulated chicken seasoning to taste (optional)
– fish sauce to taste (optional)

Fermented Tofu/Bean Curd sauce:
– 1/2 jar chao (vietnamese fermented tofu)
– 1/3rd a lime
– 3-4 tbls spoon sugar

– red chili to taste (minced)
– 2-3 pc garlic cloves (minced)

– 1-2 tbls soy sauce

Hotpot side dishes:
– beef meatballs
– thinly sliced beef
– black hog pork belly
– egg noodles
– chrysanthemum leaves
– napa cabbage etc.

Adjust according to your taste. Different brands of fish sauce or amount of bones will reflect differently. The amount listed is the standard. Have fun cooking! 🙂
